What's "ghee", and is it really butter?

Ghee is a traditional preparation of butter, which is slowly and gently heated so that the milk solid settle out, and the small bit of water which is in the butter evaporates.

What's left is pure butter fat. This means you get all of the benefits of butter, but without:

  • Milk solids and water, which would normally cause butter to spoil if it isn't refrigerated.
  • Caseins and other milk proteins, to which some people find they have an intolerance.
